(The Peace Tower of Sour)
Born and raised in the potato capital of Ontario (Alliston), Tomas gained an interest in the beer industry studying Food Engineering and Microbiology during his Chemical Engineering degree at the University of Toronto. Homebrewing became an “extra-curricular” with friends peaking his interest in the beer world further.
Following undergrad and a desk-jockey job in the Nuclear Industry, Tomas longed for an opportunity to express some creativity before landing at Niagara College. Along with beer development, he enjoys designing labels for his homebrew (and who doesn’t love a punny name?).
Upon graduation, Tomas would like to expand his production knowledge with a sour and/or barrel ageing program. Eventually, he would like to contribute to product development and recipe scaling.
This summer, Tomas is creating a kettle-soured witbier. A play on a classic Belgian style, the resulting beer will be a refreshing break from the scorching heat ahead combining orange peel and coriander with acidity to bring out extra yeast-derived fruitiness.
