Mark grew up in the rolling flats of Caledon, Ontario as a dairy farmer. Being used to hard work and little pay, he figured he would join the craft beer world – where brewers work very hard for very little.
For him, it’s the amalgamation of farming, science, and art that make brewing beer such a fulfilling path. What to do with all this newfound beer knowledge? World domination, of course! To work alongside fellow brewers with intent of producing beer of quality and consistency.
In a perfect world, Mark would bridge the gap between beer drinkers and non-beer drinkers with lightly flavoured, fruit-infused, low-calorie alternatives to todays craft beer and bring the world that much closer together.
Mark’s project brew will be a Kölsch-style lagered ale brewed to traditional style. His “Great Day for Hay” Kölsch will marry subtle fruity notes reminiscent of apple and pear with a light bready sweetness. A well balanced – soft yet crisp – palate will provide a refreshingly light summer sipper for those who work hard and play even harder.
